We partner with sommeliers, importers, and wine critics across NYC to save wine that would otherwise be discarded. Each vinegar barrel is unique, and carefully designed based on the wines we use. Our current vinegar uses a blend of Barolo, Burgundy, Bairada, Loire, Etna wines. We will be releasing single-cru vinegars soon.
